Introduction: Huangpu scrambled egg is said to be invented by a Huangpu boatman of Guangzhou. The man cooked this dish to entertain a guest, and the hastily made dish turned out to be a delicacy. Later, some top chef improved the dish and it became famous in restaurants all over Guangzhou. Despite simple ingredient, the dish attaches great importance to the process of making. Huangpu scrambled eggs that looks like a piece of gold cloth is neither fried eggs nor omelets, but a blend of the quintessence of the both.
