Introduction: Congee with lean pork, pork liver and intestines is a type of Cantonese rice porridge and a traditional dish of the Han nationality in Guangdong. The rice porridge is white, extremely creamy and aromatic. The congee is first boiled in a small pot, and then the pork offal is put inside. When the meat is cooked, it is ready to be served with fried peanuts and chopped fried dough sticks as toppings. The literal name of this dish is “No. 1 Scholar Congee” which is also a selling point with lots of stories about its name.
