Introduction: Roasted peanut with red fermented bean curd is a Cantonese specialty allegedly invented by a Cantonese local called De the Blind. Red fermented bean curd called “nam yu” in Cantonese incorporates red yeast rice with the brining liquor, which is famous for a deep-red color and distinctively thickened flavor and aroma. Food cooked with red fermented bean curd is very popular in Xiguan (a traditional geographical division of Guangzhou), including salty dough fritters, nam yu cookie (chicken biscuit), and beng sha (butterfly biscuit).
