Introduction: Shumai a type of traditional Chinese dumpling served as dim sum in Guangdong Province. It is one of the most popular dim sums in Cantonese style morning or afternoon tea. Shumai is mainly made from pork, shrimp meat, wonton wrapper and egg, with light soy sauce, sugar, salt, chicken powder, ground pepper, cornstarch and cooking wine as condiment. In the 1930s, Shumai had been very popular all over Guangdong. In the last 20 years, it has been spread across all the large and medium-sized cities in Guangxi. Now it is a must for the tea houses and restaurants in Lingnan (the region covers the modern Chinese provinces of Jiangxi, Hunan, Guangdong, Guangxi, and Hainan).
